Grilled Chicken & Broccoli Bowls

Ingredients

Chicken

  • 1½ lb (700 g) chicken breast or thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice

Broccoli

  • 4 cups broccoli florets
  • 1 tbsp olive oil (if roasting)
  • Salt and pepper to taste

Creamy Garlic Sauce

  • ¾ cup Greek yogurt
  • 2 tbsp mayonnaise (optional for richness)
  • 3 cloves garlic, finely minced or grated
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 tbsp grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1–2 tbsp water (to thin if needed)

Instructions

1. Marinate Chicken

Mix:

  • olive oil
  • garlic
  • paprika
  • Italian seasoning
  • salt
  • pepper
  • lemon juice

Coat chicken and let sit 15–30 minutes (or longer if possible).


2. Cook Chicken

Grill Method

Grill over medium-high heat 5–7 minutes per side until cooked through.

Pan Method

Cook in skillet 6–8 minutes per side.

Rest 5 minutes, then slice.


3. Prepare Broccoli

Roasted (best flavor)

  • Preheat oven to 425°F (220°C)
  • Toss broccoli with olive oil, salt, pepper
  • Roast 15–18 minutes until slightly crispy

Steamed (lighter option)

Steam 4–5 minutes until tender-crisp.


4. Make Creamy Garlic Sauce

Whisk together:

  • Greek yogurt
  • mayo (if using)
  • garlic
  • lemon juice
  • Dijon mustard
  • Parmesan
  • salt
  • pepper

Add water if needed to reach drizzle consistency.


5. Assemble Bowls

In each bowl add:

  • broccoli base
  • sliced grilled chicken
  • generous drizzle of garlic sauce
