For the Tzatziki Sauce
- 1 cup nonfat Greek yogurt
- ½ cucumber, grated
- 1 garlic clove, minced
- 1 tbsp fresh dill
- 1 tbsp lemon juice
- ½ tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Tzatziki
Grate cucumber and squeeze out excess liquid using a clean towel or paper towels.
In a bowl combine:
- Greek yogurt
- cucumber
- garlic
- dill
- lemon juice
- olive oil
- salt
- pepper
Mix well.
Refrigerate while preparing meatballs for best flavor.
2. Make the Meatball Mixture
In a large bowl combine:
- ground chicken
- breadcrumbs
- egg
- garlic
- onion
- parsley
- dill
- oregano
- salt
- pepper
- lemon juice
- lemon zest
Mix gently until just combined.
Do not overmix.
3. Shape the Meatballs
Roll into:
- 1 to 1½ inch meatballs
You should get:
- about 16–18 meatballs
4. Cook the Meatballs
Oven Method (Recommended)
Preheat oven to:
- 400°F (200°C)
Place meatballs on a parchment-lined baking sheet.
Lightly spray with cooking spray.
Bake:
- 15–18 minutes
Until golden and fully cooked.
