Weight Watchers Greek Chicken Meatballs with Tzatziki

Ingredients

For the Greek Chicken Meatballs

  • 1 lb (450 g) lean ground chicken
  • ⅓ cup whole wheat breadcrumbs
  • 1 egg
  • 2 garlic cloves, minced
  • ¼ cup red onion, finely diced
  • 2 tbsp parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp olive oil (optional for cooking)

For the Tzatziki Sauce

  • 1 cup nonfat Greek yogurt
  • ½ cucumber, grated
  • 1 garlic clove, minced
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice
  • ½ tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Tzatziki

Grate cucumber and squeeze out excess liquid using a clean towel or paper towels.

In a bowl combine:

  • Greek yogurt
  • cucumber
  • garlic
  • dill
  • lemon juice
  • olive oil
  • salt
  • pepper

Mix well.

Refrigerate while preparing meatballs for best flavor.


2. Make the Meatball Mixture

In a large bowl combine:

  • ground chicken
  • breadcrumbs
  • egg
  • garlic
  • onion
  • parsley
  • dill
  • oregano
  • salt
  • pepper
  • lemon juice
  • lemon zest

Mix gently until just combined.

Do not overmix.


3. Shape the Meatballs

Roll into:

  • 1 to 1½ inch meatballs

You should get:

  • about 16–18 meatballs

4. Cook the Meatballs

Oven Method (Recommended)

Preheat oven to:

  • 400°F (200°C)

Place meatballs on a parchment-lined baking sheet.

Lightly spray with cooking spray.

Bake:

  • 15–18 minutes

Until golden and fully cooked.

Safe internal temperature:

Skillet Method

Heat a nonstick skillet over medium heat.

Add a small amount of olive oil spray.

Cook meatballs:

  • 8–10 minutes total

Turning occasionally until browned and cooked through.


5. Serve
