Air Fryer Milk Brioche Rolls

Air Fryer Milk Brioche Rolls

Air Fryer Milk Brioche Rolls are soft, fluffy, buttery rolls with a rich golden crust and a light, tender interior. These homemade rolls are slightly sweet and incredibly airy, making them perfect for breakfast, dinner, sandwiches, or serving alongside soups and holiday meals. The air fryer gives the rolls a beautifully golden top while keeping the inside moist and pillowy soft, all in less time than a traditional oven.

Brioche dough is known for its rich texture thanks to eggs, milk, and butter. The warm milk helps activate the yeast, creating rolls that rise beautifully and bake into soft bakery-style bread. These rolls have a delicate sweetness that pairs wonderfully with butter, jam, honey, or savory fillings like ham and cheese. Despite their elegant texture, the dough is surprisingly simple to prepare using basic pantry ingredients.

One of the best things about making brioche rolls in the air fryer is the quick cooking process. The circulating hot air creates evenly baked rolls with a golden glossy top and fluffy center. They are perfect for smaller batches without heating up the kitchen, and the air fryer gives them a slightly crisp exterior while keeping the inside soft and buttery.

These milk brioche rolls are ideal for family dinners, holiday tables, brunch spreads, or meal prep. They taste amazing fresh from the air fryer and can also be reheated easily for soft, warm rolls anytime. Whether enjoyed plain, spread with butter, or used for mini sandwiches, these homemade brioche rolls are guaranteed to impress.

Ingredients

  • 4 cups all-purpose flour
  • 2 eggs, room temperature
  • 1 cup whole milk, heated to about 110°F (43°C)
  • ¼ cup granulated sugar
  • 2¼ teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • ¼ cup unsalted butter, softened
  • 1 tablespoon olive oil or melted butter for brushing

Optional Egg Wash

  • 1 egg
  • 1 tablespoon milk

Instructions

Step 1: Activate the Yeast

In a large bowl, combine the warm milk, sugar, and yeast. Stir gently and let sit for 5–10 minutes until foamy.

Step 2: Make the Dough

Add the eggs and softened butter to the yeast mixture and whisk lightly.

Gradually add the flour and salt, mixing until a soft dough forms.

Step 3: Knead the Dough

Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic. The dough should feel soft and slightly tacky but not sticky.

Step 4: First Rise

Place the dough into a lightly greased bowl and cover with a towel or plastic wrap. Let rise in a warm place for 1–1½ hours or until doubled in size.

Step 5: Shape the Rolls

Punch down the dough and divide it into 10–12 equal portions. Shape each portion into a smooth ball.

Place the rolls into a greased air fryer-safe baking pan or cake pan, leaving a little space between them.

Step 6: Second Rise

Cover loosely and let the rolls rise again for 30–40 minutes until puffy.

Step 7: Prepare for Baking

Preheat the air fryer to 320°F (160°C) for 3 minutes.

For a glossy finish, whisk together the egg and milk and brush over the tops of the rolls.

Step 8: Air Fry the Rolls

Place the pan into the air fryer basket and cook at 320°F (160°C) for 12–15 minutes or until the tops are deep golden brown and the rolls are cooked through.

If the tops brown too quickly, loosely cover with foil during the final few minutes.

Step 9: Finish and Serve

Brush the warm rolls with melted butter or olive oil for extra softness and shine.

Serve warm.
