Ingredients (2 servings)

Pudding Base

  • 1 cup plain nonfat Greek yogurt
  • 1 scoop vanilla whey isolate
  • 1/2 small banana
  • 2 tbsp sugar-free vanilla pudding mix
  • 2–4 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract
  • Sweetener to taste (monk fruit or erythritol)

Fruit Layer

  • 1/2 cup fresh strawberries, sliced
  • Optional: a few extra banana slices for topping

Crunch Layer (Optional)

  • Crushed low-carb cookies
  • Chopped roasted peanuts or almonds
  • Unsweetened coconut flakes

Instructions

  1. Add Greek yogurt, whey isolate, banana, pudding mix, vanilla, and almond milk to a blender.
  2. Blend until smooth and thick.
  3. Taste and adjust sweetness.
  4. Layer pudding and strawberries in glasses or jars.
  5. Chill for 20–30 minutes for best texture.
  6. Add crunchy toppings before serving.
