Ingredients (Serves 4)
- 1 lb (450 g) ground beef
- 3 large bell peppers (red, yellow, green), sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked rice or cauliflower rice
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
- Salt & black pepper to taste
- 1 cup tomato sauce or diced tomatoes
- 1½ cups shredded mozzarella cheese
- ½ cup cheddar cheese
- 1 tbsp olive oil
Optional toppings
- Jalapeño slices
- Fresh parsley
- Parmesan cheese
Instructions
1. Prep
Preheat oven to 375°F (190°C).
Grease small baking tins or a casserole dish.
2. Cook the beef
Heat olive oil in a skillet.
Add onion and garlic; sauté 2–3 minutes.
Add ground beef and cook until browned.
Season with:
- paprika
- Italian seasoning
- salt
- pepper
- chili flakes
Stir in tomato sauce and cooked rice (or cauliflower rice).
Cook 3–4 minutes.
3. Assemble
Layer sliced bell peppers into the baking dishes.
Spoon the beef mixture over the peppers.
Top generously with mozzarella and cheddar.
Add jalapeño slices if desired.
4. Bake
Bake uncovered for 18–22 minutes until cheese is melted and golden.
Broil 2 minutes for extra browning.
