Ingredients
Potato Filling
- 700 g potatoes, peeled and diced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced small
- 1 zucchini, diced
- 150 g mushrooms, chopped
- 100 g peas
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- ½ tsp paprika
Creamy Sauce
- 2 tbsp flour
- 300 ml unsweetened plant milk
(soy, oat, or almond) - 2 tbsp nutritional yeast (optional)
- 1 tsp mustard
- Salt and pepper to taste
Topping Options
Option 1: Mashed Potato Topping
- 300 g extra potatoes
- 2–3 tbsp plant milk
Option 2: Puff Pastry Topping
- 1 vegan puff pastry sheet
Instructions
1. Cook the potatoes
Boil the diced potatoes in salted water for:
- 12–15 minutes
until tender.
Drain and set aside.
If using mashed potato topping:
- boil the extra potatoes separately
- mash with plant milk and salt
2. Cook the vegetables
Heat olive oil in a large pan.
Add:
- onion
- carrot
Cook 5 minutes.
Add:
- garlic
- zucchini
- mushrooms
Cook until softened and most moisture evaporates.
Add peas, thyme, paprika, salt, and pepper.
3. Make the creamy sauce
Sprinkle flour into the pan.
Stir well for 1 minute.
Slowly pour in plant milk while stirring continuously.
Add:
- nutritional yeast
- mustard
Cook until thick and creamy.
Taste and adjust seasoning.
4. Add potatoes
Fold the cooked potatoes into the creamy vegetable mixture.
Mix gently so potatoes stay slightly chunky.
Assemble the Pie
For Mashed Potato Topping
- Transfer filling into a baking dish.
- Spread mashed potatoes on top.
- Create texture with a fork.
For Puff Pastry Topping
- Fill baking dish with mixture.
- Lay pastry on top.
- Cut small steam slits.

Preheat oven to:
- 200°C (390°F)
Bake:
- Mashed topping: 25–30 minutes
- Puff pastry topping: 20–25 minutes
