Black Cherry Cheesecake Bites

Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp melted butter

Cheesecake Filling

  • 450 g cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp lemon juice

Black Cherry Topping

  • 1 1/2 cups black cherries (fresh or frozen, pitted)
  • 3 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water

Optional Garnishes

  • Whipped cream
  • Chocolate drizzle
  • Crushed graham crackers
  • Mint leaves

Equipment

  • Mini muffin pan or mini cheesecake pan
  • Paper liners
  • Mixing bowls
  • Hand mixer

Instructions

Step 1: Preheat oven

Preheat oven to:

  • 163°C (325°F)

Line mini muffin pan with paper liners.


Step 2: Make the crust

In a bowl, combine:

  • Graham cracker crumbs
  • Sugar
  • Melted butter

Mix until evenly moistened.

Add about:

  • 1 tbsp crust mixture

Into each liner.

Press firmly using the back of a spoon.

Bake for:

  • 5 minutes

Then cool slightly.


Step 3: Prepare cheesecake filling

In a large bowl, beat cream cheese until smooth.

Add:

  • Sugar

Mix until creamy.

Add eggs one at a time, mixing gently after each.

Mix in:

  • Vanilla
  • Sour cream
  • Lemon juice

Do not overmix.


Step 4: Fill and bake

Spoon cheesecake filling over crusts, filling each nearly full.

Bake for:

  • 14–18 minutes

Centers should appear mostly set with slight jiggle.

Cool completely at room temperature.

Then refrigerate for:

  • At least 2 hours

Step 5: Make black cherry topping

In a saucepan over medium heat, combine:

  • Cherries
  • Sugar
  • Lemon juice

Cook for:

  • 5–7 minutes

Until cherries soften.

Mix cornstarch with water to make slurry.

Stir slurry into cherries.

Cook another:

  • 1–2 minutes

Until glossy and thickened.

Cool completely.


Step 6: Assemble

Top each cheesecake bite with spoonful of cherry topping.

Add optional garnishes if desired.
