For the Cake Layers

  • 1 cup heavy whipping cream
  • ½ cup powdered keto sweetener
  • 2 tsp vanilla extract

For the Chocolate Topping

  • 100 g sugar-free dark chocolate, chopped
  • ⅓ cup heavy cream
  • 1 tbsp butter

Instructions

  1. Line an 8-inch square baking dish with parchment paper.
  2. In a bowl, combine almond flour, sweetener, melted butter, and vanilla.
  3. Press half of the mixture into the bottom of the dish to form the first layer.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add the powdered sweetener and vanilla extract and mix well.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the cream cheese mixture.
  8. Spread the filling evenly over the base layer.
  9. Sprinkle or gently press the remaining almond flour mixture over the filling.
  10. For the topping, heat the heavy cream until hot but not boiling.
  11. Pour over the chopped chocolate and let sit for 2 minutes.
  12. Stir until smooth, then mix in the butter.
  13. Pour the ganache over the top layer and spread evenly.
  14. Refrigerate for at least 4 hours, preferably overnight.
  15. Slice into squares and serve chilled.
