Blueberry Baked Oatmeal Casserole

Ingredients

  • 2 cups (180 g) old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • 1¾ cups (420 ml) milk
  • ⅓ cup (80 ml) maple syrup or honey
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (plus extra for topping)
  • ¼ cup sliced almonds

Optional Creamy Layer

  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp maple syrup
  • 1 egg
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease an 8-inch (20 cm) square baking dish.
  3. In a bowl, combine oats, baking powder, cinnamon, and salt.
  4. In another bowl, whisk eggs, milk, maple syrup, melted butter, and vanilla.
  5. Stir wet ingredients into dry ingredients.
  6. Fold in 1 cup blueberries.
  7. If making the creamy layer:
    • Beat cream cheese, maple syrup, egg, and vanilla until smooth.
    • Spread half the oat mixture into the baking dish.
    • Spread cream cheese mixture over it.
    • Top with remaining oat mixture.
  8. Sprinkle extra blueberries and sliced almonds on top.
  9. Bake 35–45 minutes until golden brown and set in the center.
  10. Cool for 10 minutes before serving.

For the glossy finish shown in the photo

Brush the hot casserole with:

  • 1–2 tbsp warmed honey or maple syrup

This gives the shiny, bakery-style appearance visible in the image.

Serving

Serve warm with:

  • Greek yogurt
  • Additional blueberries
  • A drizzle of maple syrup or honey
