  • Total Time: About 3 hours

🍽️ Yield

  • 20–24 truffles

🧾 Ingredients

For the Truffle Filling

  • 12 oz (340 g) white chocolate, finely chopped
  • ¼ cup (60 ml) heavy cream
  • 2 tbsp unsalted butter
  • Zest of 2 lemons
  • 2 tbsp fresh lemon juice
  • ½ tsp vanilla extract
  • Pinch of salt

For Coating (Choose One or More)

  • ½ cup powdered sugar
  • ½ cup finely shredded coconut
  • ½ cup crushed vanilla wafers
  • Extra melted white chocolate
  • Finely grated lemon zest

🍳 Equipment

  • Small saucepan
  • Heatproof bowl
  • Whisk or spatula
  • Baking sheet or plate
  • Parchment paper
  • Small cookie scoop (optional)

👩‍🍳 Step 1: Prepare the White Chocolate

Place the finely chopped white chocolate into a heatproof bowl.

The smaller the pieces, the more evenly it will melt.

👩‍🍳 Step 2: Heat the Cream Mixture

In a small saucepan, combine:

  • Heavy cream
  • Butter
  • Lemon zest

Heat over medium-low heat.

Do not boil.

When the mixture begins to steam and tiny bubbles appear around the edges, remove from the heat.

👩‍🍳 Step 3: Make the Ganache

Pour the warm cream mixture over the chopped white chocolate.

Let sit undisturbed for 2 minutes.

Then stir slowly until smooth and glossy.

Add:

  • Lemon juice
  • Vanilla extract
  • Pinch of salt

Mix until fully incorporated.

If the mixture looks separated:

Whisk gently until smooth.

👩‍🍳 Step 4: Chill the Mixture

Cover the bowl with plastic wrap.

Place in the refrigerator for 2–3 hours until firm enough to scoop.

The mixture should be soft but hold its shape.

👩‍🍳 Step 5: Shape the Truffles

Line a tray or plate with parchment paper.

Using a small cookie scoop or spoon:

  1. Scoop about 1 tablespoon of the mixture.
  2. Roll between your palms to form a ball.

If the mixture becomes too soft, refrigerate for 10–15 minutes before continuing.

👩‍🍳 Step 6: Coat the Truffles

Roll each truffle in your preferred coating:

Powdered Sugar

Creates a sweet, snowy appearance.

Coconut

Adds texture and tropical flavor.

Crushed Vanilla Wafers

Provides a cheesecake-like taste.

White Chocolate Coating

Dip truffles into melted white chocolate and place on parchment to set.

Finish with a little lemon zest for decoration.

👩‍🍳 Step 7: Final Chill

Place coated truffles in the refrigerator for 20–30 minutes to firm up completely.
