  • 3 cups cooked chicken, shredded or diced (rotisserie works well)
  • 4 cups broccoli florets (fresh or frozen)
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme

Creamy Keto Sauce

  • 4 oz (115 g) cream cheese, softened
  • 1 cup heavy cream
  • ½ cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp Dijon mustard (optional, adds depth)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper (optional for heat)

Topping (Optional but recommended)

  • ½ cup shredded cheddar cheese
  • 2 tbsp grated parmesan cheese
  • 2 tbsp crushed pork rinds or almond flour (for crunch)
  • 1 tbsp chopped parsley

Step 1: Prepare the Broccoli

Option 1: Steam (Best Texture)

  1. Steam broccoli for 3–4 minutes until bright green and slightly tender.
  2. Do not overcook—it will soften more in the oven.

Option 2: Microwave

  1. Place broccoli in a bowl with a splash of water.
  2. Cover and microwave for 2–3 minutes.
  3. Drain well.

Set aside.


Step 2: Cook Aromatics

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add onion and cook for 3–4 minutes until soft.
  3. Add garlic and cook for 30 seconds.
  4. Add salt, pepper, paprika, and thyme.
  5. Stir and remove from heat.

Step 3: Prepare the Chicken

  1. Shred or dice cooked chicken.
  2. Add to a large mixing bowl.
  3. Combine with cooked onion-garlic mixture.

Step 4: Make the Creamy Sauce

In a saucepan over medium-low heat:

    • Cayenne (optional)
  6. Stir until cheeses melt into a smooth sauce.

The sauce should be thick, rich, and pourable.


Step 5: Combine Everything

In the bowl with chicken:

  1. Add steamed broccoli.
  2. Pour creamy sauce over the mixture.
  3. Mix gently until everything is well coated.

Step 6: Assemble the Casserole

  1. Preheat oven to 190°C (375°F).
  2. Grease a 9×13-inch baking dish.
  3. Pour mixture into the dish.
  4. Spread evenly.

Step 7: Add Topping

Sprinkle on top:

  • Cheddar cheese
  • Parmesan cheese
  • Pork rinds or almond flour (for keto crunch)

Step 8: Bake

Bake for 30–35 minutes.

It is done when:
