Easy Taco Bell–Style Mexican Pizza

Makes: 4 pizzas

Ingredients

Base

8 flour tortillas

1 tbsp avocado oil

Bean Layer

1 can (15 oz) refried pinto beans

1½ tbsp taco seasoning

1/4 cup water

1/2 cup chopped onion

Toppings

2 tomatoes, diced

1 jalapeño, seeded and diced

2 scallions, sliced

2 cups shredded cheese

Salsa or taco sauce

Directions

Preheat oven to 400°F (200°C).

Brush tortillas lightly with oil and prick with a fork.

Bake for 5 minutes per side until crisp. Set aside.

In a saucepan, heat refried beans with taco seasoning, water, and onion until warm.

Spread beans on one tortilla.

Add a spoonful of salsa and top with a second tortilla.

Spread more salsa on top.

Sprinkle with tomatoes, jalapeños, scallions, and cheese.

Bake for 3–5 minutes until the cheese melts.

Slice into quarters and serve hot.
