Meatloaf with Cheesy Garlic Bread

Ingredients

  • 900 g (2 lb) ground beef (85–90% lean)
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • ½ cup almond flour
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp sugar-free ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning

Glaze

  • ¼ cup sugar-free ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tsp keto sweetener (optional)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Mix all meatloaf ingredients in a large bowl until combined.
  3. Shape into a loaf and place in a lined loaf pan or on a baking sheet.
  4. Bake for 35 minutes.
  5. Mix glaze ingredients and spread over the meatloaf.
  6. Return to oven and bake another 15–20 minutes, until the internal temperature reaches 71°C (160°F).
  7. Rest for 10 minutes before slicing.

Keto Cheesy Garlic Bread

Ingredients

  • 2 cups shredded mozzarella cheese
  • 60 g (2 oz) cream cheese
  • 1 cup almond flour
  • 1 large egg
  • 2 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella (for topping)
  • 2 tbsp grated Parmesan
  • Fresh parsley, chopped

Instructions

  1. Microwave mozzarella and cream cheese for 60–90 seconds, stirring until melted.
  2. Mix in almond flour and egg to form a dough.
  3. Press dough into a rectangle on parchment paper.
  4. Bake at 220°C (425°F) for 10–12 minutes until golden.
  5. Combine melted butter, garlic, and Italian seasoning.
  6. Brush over the baked crust.
  7. Top with mozzarella and Parmesan.
  8. Bake another 5–7 minutes until cheese is melted and bubbly.
  9. Garnish with parsley and slice.
