Ingredients
- 900 g (2 lb) ground beef (85–90% lean)
- 2 large eggs
- ½ cup grated Parmesan cheese
- ½ cup almond flour
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp sugar-free ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
Glaze
- ¼ cup sugar-free ketchup
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1 tsp keto sweetener (optional)
Instructions
- Preheat oven to 190°C (375°F).
- Mix all meatloaf ingredients in a large bowl until combined.
- Shape into a loaf and place in a lined loaf pan or on a baking sheet.
- Bake for 35 minutes.
- Mix glaze ingredients and spread over the meatloaf.
- Return to oven and bake another 15–20 minutes, until the internal temperature reaches 71°C (160°F).
- Rest for 10 minutes before slicing.
Keto Cheesy Garlic Bread
Ingredients
- 2 cups shredded mozzarella cheese
- 60 g (2 oz) cream cheese
- 1 cup almond flour
- 1 large egg
- 2 tbsp butter, melted
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella (for topping)
- 2 tbsp grated Parmesan
- Fresh parsley, chopped
Instructions
- Microwave mozzarella and cream cheese for 60–90 seconds, stirring until melted.
- Mix in almond flour and egg to form a dough.
- Press dough into a rectangle on parchment paper.
- Bake at 220°C (425°F) for 10–12 minutes until golden.
- Combine melted butter, garlic, and Italian seasoning.
- Brush over the baked crust.
- Top with mozzarella and Parmesan.
- Bake another 5–7 minutes until cheese is melted and bubbly.
- Garnish with parsley and slice.
