Ingredients
- 120 g cottage cheese
- 25 g almond flour
- Zest of 1 lemon
- 1 tbsp fresh lemon juice
- 30 g vanilla protein powder (about 1 scoop)
- 30 g fresh blueberries, finely chopped
- 1–2 tbsp powdered erythritol or monk fruit sweetener (to taste)
- ½ tsp vanilla extract
- Pinch of salt
Optional Coating
- 2 tbsp unsweetened shredded coconut
- Extra lemon zest
Instructions
Step 1: Blend the Base
- Add cottage cheese, lemon zest, lemon juice, vanilla extract, sweetener, and salt to a blender or food processor.
- Blend until completely smooth.
Step 2: Make the Dough
- Transfer the mixture to a bowl.
- Stir in the almond flour and protein powder.
- Fold in the chopped blueberries.
- If the mixture is too soft, refrigerate for 15–20 minutes.
Step 3: Shape the Bites
- Scoop about 1 tablespoon of mixture at a time.
- Roll into balls using slightly damp hands.
- Roll in shredded coconut and extra lemon zest if desired.
Step 4: Chill
- Place on a lined tray or plate.
- Refrigerate for at least 30 minutes to firm up.
Optional Baked Version
- Preheat oven to 175°C (350°F).
- Place bites on a parchment-lined baking sheet.
- Bake for 10–12 minutes until lightly set.
- Cool completely before serving.
