Classic French Crêpes

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 tbsp butter, melted (plus extra for greasing the pan)
  • Optional (for sweet crêpes): 1 tbsp sugar and 1 tsp vanilla extract
  • Fillings: Chocolate hazelnut spread (Nutella), melted chocolate, or fruit.

Step-by-Step Instructions

Step 1: Make the Batter

  1. Blend or Whisk: In a large mixing bowl, whisk together the flour and the eggs. Slowly pour in the milk and water, whisking constantly to incorporate the liquid and prevent lumps.
  2. Add Finishing Ingredients: Add the salt, melted butter, (and sugar/vanilla if using). Whisk until the batter is completely smooth and liquid—it should have the consistency of heavy cream.
  3. Rest the Batter: Let the batter rest on the counter for at least 15 to 30 minutes. This lets the gluten relax and guarantees your crêpes will be incredibly tender rather than rubbery.

Step 2: Cook the Crêpes

  1. Heat the Pan: Heat a 10-inch non-stick skillet or crêpe pan over medium heat. Melt a tiny dot of butter to lightly coat the surface.
  2. Pour and Swirl: Lift the pan off the heat slightly. Pour about 1/4 cup of batter into the center of the pan, and immediately tilt and rotate the pan in a circular motion so the batter coats the bottom in a very thin, even layer.
  3. Flip: Cook for about 1 to 2 minutes. The edges will look dry and begin to lift slightly from the pan. Carefully slide a spatula underneath, flip it over, and cook the second side for another 30 to 45 seconds until golden spots appear.
  4. Repeat: Transfer the cooked crêpe to a plate and repeat the process with the remaining batter.

Step 3: Assemble

  1. Lay a crêpe flat. Spread a thin layer of your chosen filling (like Nutella) over the surface.
  2. Roll the crêpe up tightly into a log, just like in the bottom photo.
  3. Stack them on a platter and drizzle with extra melted chocolate or a dusting of powdered sugar before serving!
