Keto Taco Soup

Ingredients

  • 2 lbs (900 g) ground beef (80–90% lean)
  • 1 medium onion, diced (optional; omit for fewer carbs)
  • 3 cloves garlic, minced
  • 1 tbsp olive oil (if needed)
  • 1 packet taco seasoning or homemade seasoning:
    • 1 tbsp chili powder
    • 1 tsp cumin
    • 1 tsp paprika
    • ½ tsp oregano
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • Salt and pepper to taste
  • 1 can (10 oz / 280 g) diced tomatoes with green chilies
  • 1 can (14–15 oz / 400 g) crushed tomatoes
  • 4 cups beef broth
  • 4 oz (115 g) cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 small green bell pepper, diced
  • 1 cup cauliflower rice (optional, for extra texture)

Instructions

  1. Brown the beef
    • Heat a large pot or Dutch oven over medium-high heat.
    • Add the ground beef and cook until browned.
    • Drain excess grease if desired.
  2. Cook vegetables
    • Add onion (if using), bell pepper, and garlic.
    • Cook for 3–4 minutes until softened.
  3. Season
    • Stir in taco seasoning and cook for 30 seconds.
  4. Add liquids
    • Pour in diced tomatoes, crushed tomatoes, and beef broth.
    • Stir well and bring to a simmer.
  5. Simmer
    • Add cauliflower rice if using.
    • Simmer uncovered for 15–20 minutes.
  6. Make it creamy
    • Reduce heat to low.
    • Stir in cream cheese until fully melted.
    • Add heavy cream and cheddar cheese.
    • Stir until smooth and creamy.
  7. Adjust seasoning
    • Taste and add extra salt, pepper, chili powder, or cumin as desired.

  • Chopped cilantro
  • Crushed pork rinds (for crunch)

Slow Cooker Version

  1. Brown the beef first.
  2. Add beef, vegetables, seasonings, tomatoes, and broth to the slow cooker.
  3. Cook on Low for 6–8 hours or High for 3–4 hours.
  4. Stir in cream cheese, heavy cream, and cheddar during the last 30 minutes.
