Ingredients
- 2 lbs (900 g) ground beef (80–90% lean)
- 1 medium onion, diced (optional; omit for fewer carbs)
- 3 cloves garlic, minced
- 1 tbsp olive oil (if needed)
- 1 packet taco seasoning or homemade seasoning:
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- 1 can (10 oz / 280 g) diced tomatoes with green chilies
- 1 can (14–15 oz / 400 g) crushed tomatoes
- 4 cups beef broth
- 4 oz (115 g) cream cheese, softened
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 small green bell pepper, diced
- 1 cup cauliflower rice (optional, for extra texture)
Instructions
- Brown the beef
- Heat a large pot or Dutch oven over medium-high heat.
- Add the ground beef and cook until browned.
- Drain excess grease if desired.
- Cook vegetables
- Add onion (if using), bell pepper, and garlic.
- Cook for 3–4 minutes until softened.
- Season
- Stir in taco seasoning and cook for 30 seconds.
- Add liquids
- Pour in diced tomatoes, crushed tomatoes, and beef broth.
- Stir well and bring to a simmer.
- Simmer
- Add cauliflower rice if using.
- Simmer uncovered for 15–20 minutes.
- Make it creamy
- Reduce heat to low.
- Stir in cream cheese until fully melted.
- Add heavy cream and cheddar cheese.
- Stir until smooth and creamy.
- Adjust seasoning
- Taste and add extra salt, pepper, chili powder, or cumin as desired.

Slow Cooker Version
- Brown the beef first.
- Add beef, vegetables, seasonings, tomatoes, and broth to the slow cooker.
- Cook on Low for 6–8 hours or High for 3–4 hours.
- Stir in cream cheese, heavy cream, and cheddar during the last 30 minutes.
