Teriyaki Chicken and Pineapple Foil Packets

Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • ¼ cup teriyaki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon grated fresh ginger (or ½ teaspoon ground ginger)
  • Salt and black pepper, to taste
  • 1 teaspoon sesame seeds (optional)
  • 2 tablespoons chopped green onions, for garnish

Instructions

1. Prepare the Ingredients

  • Preheat the air fryer to 380°F (193°C).
  • In a large bowl, combine the chicken, pineapple, bell pepper, and onion.
  • Add the olive oil, teriyaki sauce, garlic powder, ginger, salt, and pepper. Toss until everything is evenly coated.

2. Make the Foil Packet

  • Place the mixture in the center of a large sheet of heavy-duty aluminum foil.
  • Fold and seal the foil tightly to create a packet, leaving a little room inside for steam to circulate.

3. Air Fry

  • Place the foil packet in the air fryer basket.
  • Cook at 380°F (193°C) for 18–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

4. Finish & Serve

  • Carefully open the foil packet, as hot steam will escape.
  • Garnish with sesame seeds and chopped green onions.
  • Serve over steamed rice, jasmine rice, cauliflower rice, or noodles.
