CORNBREAD — THE TASTE OF HOME 

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar (optional)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract (optional, for a slightly sweeter cornbread)

Instructions

1. Prepare the Batter

  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the buttermilk, eggs, melted butter, vegetable oil, and vanilla (if using).
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

2. Prepare the Pan

  • Preheat the air fryer to 320°F (160°C).
  • Grease a 7-inch round cake pan or any air fryer-safe baking dish.
  • Pour the batter into the prepared pan and smooth the top.

3. Air Fry

  • Place the pan in the air fryer basket.
  • Cook at 320°F (160°C) for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

4. Cool & Serve

  • Let the cornbread cool in the pan for 5–10 minutes before removing.
  • Brush the top with melted butter, if desired.
  • Serve warm with honey, butter, jam, or alongside chili, barbecue, fried chicken, or soups.
