Ingredients
For the Bread:
- 1½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs, room temperature
- ½ cup milk
- ⅓ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
For the Cream Cheese Filling:
- 8 oz (225 g) cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
For the Topping (Optional):
- 2 tablespoons coarse sugar
- Extra blueberries for garnish
Instructions
1. Prepare the Batter
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, milk, oil, and vanilla extract.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- Gently fold in the blueberries.
2. Prepare the Cream Cheese Filling
- Beat softened cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
3. Assemble the Bread
- Grease an air fryer-safe loaf pan (about 7–8 inches).
- Pour half of the bread batter into the pan.
- Spread the cream cheese filling evenly over the batter.
- Add the remaining batter on top and smooth the surface.
- Sprinkle with coarse sugar and extra blueberries if desired.
4. Air Fry
- Place the loaf pan in the air fryer basket.
- Cook at 320°F (160°C) for 35–45 minutes, or until a toothpick inserted into the bread part comes out clean.
- If the top browns too quickly, cover loosely with foil halfway through cooking.
5. Cool & Serve
- Let the bread cool in the pan for 15–20 minutes before slicing.
- Serve warm or chilled with coffee, tea, or a glass of milk.
Tip: For the best texture, chill the cream cheese before slicing so the filling stays beautifully layered.
