Blueberry Cream Cheese Bread

Ingredients

For the Bread:

  • 1½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

For the Cream Cheese Filling:

  • 8 oz (225 g) cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

For the Topping (Optional):

  • 2 tablespoons coarse sugar
  • Extra blueberries for garnish

Instructions

1. Prepare the Batter

  • Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix eggs, milk, oil, and vanilla extract.
  • Combine wet and dry ingredients until just mixed. Do not overmix.
  • Gently fold in the blueberries.

2. Prepare the Cream Cheese Filling

  • Beat softened cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.

3. Assemble the Bread

  • Grease an air fryer-safe loaf pan (about 7–8 inches).
  • Pour half of the bread batter into the pan.
  • Spread the cream cheese filling evenly over the batter.
  • Add the remaining batter on top and smooth the surface.
  • Sprinkle with coarse sugar and extra blueberries if desired.

4. Air Fry

  • Place the loaf pan in the air fryer basket.
  • Cook at 320°F (160°C) for 35–45 minutes, or until a toothpick inserted into the bread part comes out clean.
  • If the top browns too quickly, cover loosely with foil halfway through cooking.

5. Cool & Serve

  • Let the bread cool in the pan for 15–20 minutes before slicing.
  • Serve warm or chilled with coffee, tea, or a glass of milk.

Tip: For the best texture, chill the cream cheese before slicing so the filling stays beautifully layered.
