Chicken Salad with Grapes

Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 1 cup red seedless grapes, halved
  • ½ cup celery, finely chopped
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt or sour cream (optional, for a lighter dressing)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • ½ cup chopped pecans or walnuts (optional)
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large bowl, combine the chicken, grapes, celery, and nuts (if using).
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  5. Garnish with fresh parsley before serving, if desired.

  • Green grapes can be substituted for red grapes.

  • Store covered in the refrigerator for up to 3 days. Do not freeze, as the dressing may separate.
