Air Fryer Fried Potatoes & Onions

Ingredients

  • 1½ pounds Yukon Gold or Russet potatoes, cut into ½-inch cubes or thin slices
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
  2. Place the potatoes in a bowl of cold water for 20–30 minutes to remove excess starch. Drain well and pat completely dry with paper towels.
  3. In a large bowl, toss the potatoes and onions with the olive oil, garlic powder, paprika, Italian seasoning, onion powder, salt, and black pepper until evenly coated.
  4. Spread the mixture in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
  5. Air fry for 18–22 minutes, shaking the basket every 5–6 minutes, until the potatoes are golden brown and tender and the onions are caramelized.
  6. Sprinkle with fresh parsley before serving, if desired.

Optional Add-Ins

  • ½ teaspoon Cajun seasoning for a spicy kick
  • ½ teaspoon smoked paprika for a smoky flavor
  • ¼ cup grated Parmesan cheese during the last 2 minutes of cooking
  • 1 teaspoon minced fresh rosemary or thyme

Tips

  • Yukon Gold potatoes turn out creamy inside with crispy edges, while Russet potatoes become extra crispy.
  • Drying the potatoes thoroughly after soaking helps them crisp up.
  • For even browning, don’t overcrowd the basket and shake it several times during cooking.
  • Leftovers can be reheated in the air fryer at 375°F (190°C) for 3–5 minutes to restore their crispness.
