Crispy Zucchini Carrot Fritters

Ingredients

  • 2 medium zucchini, grated
  • 2 medium carrots, peeled and grated
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour (or breadcrumbs)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2-3 tbsp olive oil or vegetable oil (for pan-frying)

Instructions

  1. Squeeze Moisture: Place the grated zucchini in a clean kitchen towel or cheesecloth over a sink and squeeze out as much excess liquid as possible. (Removing liquid ensures crispy fritters).
  2. Make Batter: In a large mixing bowl, combine the squeezed zucchini, grated carrots, beaten eggs, flour, Parmesan cheese, minced garlic, garlic powder, onion powder, salt, and black pepper. Stir until a thick, cohesive batter forms.
  3. Heat Pan: Heat 2 tablespoons of oil in a large skillet over medium-high heat.
  4. Fry Fritters: Scoop 1/4-cup portions of the mixture into the hot pan, pressing down lightly with a spatula to form round patties. Cook for 3–4 minutes per side, or until golden brown and crispy.
  5. Drain & Serve: Transfer the cooked fritters to a paper-towel-lined plate. Serve warm with sour cream, Greek yogurt, or garlic dip.
