Fluffy Flapjacks (American Pancakes)

Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups whole milk (or buttermilk)
- 2 large eggs
- 1/4 cup (1/2 stick) unsalted butter, melted and cooled
- 1 tsp vanilla extract
- Maple syrup and fresh berries (for serving)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In a separate bowl or measuring cup, whisk together the milk, eggs, melted butter, and vanilla extract.
- Combine: Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined. Do not overmix; a few small lumps are fine. Let the batter rest for 5–10 minutes.
- Cook Pancakes: Heat a large non-stick skillet or griddle over medium-low heat and lightly brush with melted butter or oil. Scoop 1/4 cup of batter per pancake onto the pan.
- Flip: Cook for 2–3 minutes until bubbles form on the surface and the edges look set. Flip carefully and cook for another 1–2 minutes until golden brown and cooked through.
- Serve: Stack high, drizzle generously with warm maple syrup, and serve warm with fresh berries.
