Fluffy Flapjacks (American Pancakes)

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups whole milk (or buttermilk)
  • 2 large eggs
  • 1/4 cup (1/2 stick) unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • Maple syrup and fresh berries (for serving)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Mix Wet Ingredients: In a separate bowl or measuring cup, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Combine: Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined. Do not overmix; a few small lumps are fine. Let the batter rest for 5–10 minutes.
  4. Cook Pancakes: Heat a large non-stick skillet or griddle over medium-low heat and lightly brush with melted butter or oil. Scoop 1/4 cup of batter per pancake onto the pan.
  5. Flip: Cook for 2–3 minutes until bubbles form on the surface and the edges look set. Flip carefully and cook for another 1–2 minutes until golden brown and cooked through.
  6. Serve: Stack high, drizzle generously with warm maple syrup, and serve warm with fresh berries.
