Classic Homestyle Meatloaf

Ingredients

  • 2 lbs ground beef (80/20 works best)
  • 1 medium yellow onion, finely diced
  • 1 small green bell pepper, finely diced
  • 2 large eggs
  • 3/4 cup breadcrumbs (or crushed saltine crackers)
  • 1/3 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Glaze

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard

Instructions

  1. Prep Equipment: Preheat oven to 375°F (190°C). Lightly grease a loaf pan or foil baking pan.
  2. Mix Meatloaf: In a large bowl, combine ground beef, diced onion, green bell pepper, eggs, breadcrumbs, milk, Worcestershire sauce, garlic powder, salt, and pepper. Gently mix until combined (do not overmix).
  3. Shape & Pan: Form the mixture into a compact loaf shape and place into the baking pan.
  4. Make Glaze: In a small bowl, whisk together ketchup, brown sugar, and yellow mustard. Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake: Bake for 45 minutes, then remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest & Serve: Let rest for 10 minutes before slicing to keep the meatloaf juicy.
