🧀 Crispy Cheeseburger Egg Rolls

Ingredients
For the filling
- 1 lb (450 g) lean ground beef
- ½ small yellow onion, finely diced
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 1 cup shredded cheddar or American cheese, or 8 slices American cheese
- ½ cup dill pickles, finely diced
- 8 egg roll wrappers
- 1 egg, beaten, for sealing
- Vegetable oil, for frying or brushing
Special dipping sauce
- ¼ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp sweet relish or finely diced pickles
- ½ tsp yellow mustard
Instructions
- Cook the beef: Heat a skillet over medium heat. Add the ground beef and onion and cook for 6–8 minutes, until browned and fully cooked. Drain excess fat, then season with garlic powder, salt, and pepper. Let cool slightly.
- Make the sauce: Whisk together the mayonnaise, ketchup, relish, and mustard until smooth.
- Fill the wrappers: Place an egg roll wrapper in a diamond shape. Add 1–2 tbsp cheese, 2–3 tbsp beef, some diced pickles, and a little dipping sauce—or an extra slice of cheese—in the center.
- Roll: Fold the bottom corner over the filling, fold in both sides, then roll upward tightly. Brush the remaining corner with beaten egg to seal.
- Cook:
- Deep-fry: Heat 1–2 inches of oil to 350°F (175°C). Fry in batches for 3–5 minutes, turning occasionally, until golden and crisp. Drain on paper towels.
- Air-fry: Preheat to 380°F (190°C). Lightly spray the egg rolls with oil and air-fry for 8–10 minutes, flipping halfway through.
- Serve: Cut the egg rolls diagonally and serve hot with the special burger sauce.
