Ingredients

  • 8 oz (225 g) breakfast sausage
  • 10 large eggs
  • Β½ cup milk
  • 1Β½ cups shredded cheddar cheese
  • Β½ cup diced bell pepper
  • ΒΌ cup chopped green onions
  • Β½ tsp garlic powder
  • Β½ tsp paprika
  • Β½ tsp salt
  • ΒΌ tsp black pepper
  • Cooking spray

Method

  1. Preheat oven to 350Β°F (175Β°C) and generously grease a 12-cup muffin tin.
  2. Cook the sausage in a skillet over medium heat, breaking it into small pieces. Drain excess grease.
  3. Whisk eggs, milk, garlic powder, paprika, salt, and pepper.
  4. Divide sausage, bell pepper, green onions, and 1 cup cheese among the muffin cups.
  5. Pour the egg mixture evenly into each cup, filling about ΒΎ full. Sprinkle with the remaining cheese.
  6. Bake for 20–25 minutes, until the eggs are puffed and set in the center. Similar sausage-and-cheese egg muffin recipes use a 350Β°F oven and about 20–25 minutes.
  7. Let cool for 5 minutes, then gently remove and serve.
