🥧 Walnut Cream Pie

Ingredients
For the crust
- 1½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp sugar
For the walnut cream filling
- 1 cup walnuts, finely chopped
- ¾ cup sugar
- ¼ cup cornstarch
- ¼ tsp salt
- 2 cups whole milk
- 3 egg yolks
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
For the topping
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- ½ tsp vanilla extract
- ¼ cup chopped walnuts
Method
- Make the crust: Mix graham cracker crumbs, melted butter, and sugar. Press firmly into a 9-inch pie dish. Refrigerate for 20–30 minutes.
- Make the filling: Whisk sugar, cornstarch, and salt in a saucepan. Gradually whisk in milk, then add egg yolks.
- Cook over medium heat for 6–8 minutes, stirring constantly, until thick and creamy.
- Remove from heat and stir in butter, vanilla, and chopped walnuts.
- Pour the warm filling into the crust. Cool for about 20 minutes, then refrigerate for at least 2 hours until set.
- Make the topping: Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Spread or pipe whipped cream over the chilled pie and sprinkle with chopped walnuts.
- Slice well chilled and serve. 🥧✨
