Ingredients
- 4 cups finely shredded green cabbage
- 3 large eggs
- ΒΌ cup all-purpose flour
- Β½ cup finely chopped onion
- 2 scallions, chopped
- ΒΌ cup fresh parsley, chopped
- Β½ tsp garlic powder
- Β½ tsp paprika
- Β½ tsp black pepper
- ΒΌ tsp salt
- 2 tsp olive oil or cooking spray
- 2 tbsp fresh dill, optional
Method
- Place shredded cabbage in a bowl, sprinkle with salt, and let sit for 5β10 minutes. Squeeze out excess moisture.
- Add onion, scallions, parsley, and dill.
- Whisk the eggs separately, then add them to the cabbage along with flour, garlic powder, paprika, and pepper.
- Mix well and let the mixture rest for 5 minutes.
- Heat a nonstick skillet over medium heat with the olive oil or cooking spray.
- Scoop about ΒΌ cup of mixture per fritter and flatten to about Β½ inch thick.
- Cook for 3β4 minutes per side, until golden brown and cooked through.
- Transfer to a wire rack to keep them crisp. Serve warm with Greek yogurt, lemon, or a light herb dip.
