Makes: 12 small fritters | Serves: 4 | Prep: 15 min | Cook: 15–20 min

Ingredients

  • 4 cups finely shredded green cabbage
  • 3 large eggs
  • ΒΌ cup all-purpose flour
  • Β½ cup finely chopped onion
  • 2 scallions, chopped
  • ΒΌ cup fresh parsley, chopped
  • Β½ tsp garlic powder
  • Β½ tsp paprika
  • Β½ tsp black pepper
  • ΒΌ tsp salt
  • 2 tsp olive oil or cooking spray
  • 2 tbsp fresh dill, optional

Method

  1. Place shredded cabbage in a bowl, sprinkle with salt, and let sit for 5–10 minutes. Squeeze out excess moisture.
  2. Add onion, scallions, parsley, and dill.
  3. Whisk the eggs separately, then add them to the cabbage along with flour, garlic powder, paprika, and pepper.
  4. Mix well and let the mixture rest for 5 minutes.
  5. Heat a nonstick skillet over medium heat with the olive oil or cooking spray.
  6. Scoop about ΒΌ cup of mixture per fritter and flatten to about Β½ inch thick.
  7. Cook for 3–4 minutes per side, until golden brown and cooked through.
  8. Transfer to a wire rack to keep them crisp. Serve warm with Greek yogurt, lemon, or a light herb dip.
