Healthy Zucchini Oatmeal Patties

Ingredients

  • 2 medium zucchinis (grated)
  • 1 cup quick-cooking oats (or rolled oats pulsed slightly)
  • 2 large eggs, lightly beaten
  • ¼ cup grated Parmesan cheese (or crumbled feta)
  • 2 green onions (scallions), finely chopped
  • 1 clove garlic, minced
  • ½ tsp dried Italian seasoning (or dill/parsley)
  • ½ tsp salt (plus extra for draining zucchini)
  • ¼ tsp freshly ground black pepper
  • 1–2 tbsp olive oil (for pan-frying)

Instructions

  1. Squeeze Out Excess Moisture (Crucial Step): Place the grated zucchini in a colander, toss with ½ teaspoon of salt, and let it sit for 10 minutes. Wrap the zucchini in a clean kitchen towel or cheesecloth and wring out as much liquid as humanly possible.
  2. Combine Ingredients: In a large bowl, add the drained zucchini, oats, beaten eggs, Parmesan cheese, green onions, minced garlic, Italian seasoning, salt, and black pepper. Stir well until completely combined. Let the mixture sit for 5 minutes so the oats absorb the excess moisture and bind everything together.
  3. Shape the Patties: Divide the mixture into 8 portions and firmly press them into compact patties (about ½-inch thick).
  4. Cook: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Place the patties in the skillet (cook in batches if needed so as not to overcrowd). Pan-fry for 4 to 5 minutes per side until golden brown and crisp around the edges.
  5. Serve: Transfer to a paper-towel-lined plate. Serve warm with Greek yogurt, sour cream, or garlic aioli!

Tips & Cooking Alternatives

  • Air Fryer Option: Preheat your air fryer to 375°F (190°C). Spray the basket and both sides of the patties with olive oil spray. Bake for 10–12 minutes, flipping halfway through, until crispy.
  • Oven Bake Option: Preheat oven to 400°F (200°C). Place patties on a parchment-lined baking sheet, brush with olive oil, and bake for 20 minutes (flipping at the 10-minute mark).
