Shortbread cookies are traditionally baked in a hot oven, but the high heat can easily dry out butter or brown sugar too quickly before the center sets. The air fryer solves this by circulating hot air at a lower temperature, creating a gentle bake that yields a tender crumb and a crisp exterior without burning.

Method
- Prepare the ingredients: Soften the butter until it is pliable but not melted. Measure the sugar, flour, and vanilla extract.
- Mix dry ingredients: In a small bowl, combine the all-purpose flour and salt. Whisk briefly to ensure even distribution.
- Combine wet and dry: In a larger mixing bowl, beat the softened butter and granulated sugar together using a hand mixer or fork until pale and fluffy (about 2 minutes). Add the vanilla extract and mix until combined. Gradually add the flour mixture in two parts, mixing on low speed just until no streaks of flour remain. Do not overmix, as this develops gluten and creates chewiness.
- Form the dough: Turn the dough onto a lightly floured surface. Pat it into a rough rectangle about ½ inch thick. Cut into 12 strips approximately 3 inches long using a ruler or knife guide.
- Air fryer setup: Preheat your air fryer to 300°F (150°C) for 2 minutes if your model requires preheating. Line the basket with parchment paper, leaving space around the edges for airflow.
- Cooking: Arrange the shortbread strips in a single layer without overlapping. If using a ramekin, place them side-by-side on the bottom of the dish. Cook at 300°F (150°C) for 8–10 minutes.
- Checking doneness: At the 8-minute mark, open the basket to check. The edges should be lightly golden while the center remains matte and soft. Rotate the tray or rearrange strips if necessary to ensure even cooking.

Troubleshooting
