Vegan Creamy Mushroom Burger

Ingredients

Mushroom filling

  • 250 g mushrooms (button, cremini, or chestnut), sliced
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil or any cooking oil
  • 1 tsp soy sauce
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional: pinch of chili flakes

Creamy vegan sauce

  • 3 tbsp vegan mayonnaise
  • 2 tbsp unsweetened plant milk (soy or oat works well)
  • 1 tsp lemon juice
  • 1/2 tsp mustard (optional)
  • 1 small garlic clove, grated
  • Salt to taste

Alternative richer option: blend soaked cashews with water, lemon juice, and salt until smooth and creamy.


Burger assembly

  • 2 burger buns (vegan)
  • Lettuce leaves
  • Tomato slices
  • Pickled cucumbers (optional)
  • Vegan cheese slice (optional)

Instructions

1. Cook the mushrooms

  1. Heat oil in a pan over medium-high heat.
  2. Add sliced onions and cook for 3–4 minutes until softened.
  3. Add garlic and cook for 30 seconds.
  4. Add mushrooms and cook for 6–8 minutes until they release moisture and start browning.
  5. Season with salt, pepper, smoked paprika, and soy sauce.
  6. Continue cooking until the mixture is golden and most liquid has evaporated.

2. Prepare the creamy sauce

  1. Mix vegan mayonnaise, plant milk, lemon juice, garlic, and mustard in a bowl.
  2. Whisk until smooth.
  3. Adjust salt and flavor balance as needed.
    The sauce should be creamy but slightly pourable.

3. Toast the buns

Lightly toast the burger buns in a pan or oven until golden. This helps prevent sogginess and improves texture.


4. Assemble the burger

  1. Spread creamy sauce on the bottom and top buns.
  2. Add lettuce and tomato slices to the bottom bun.
  3. Add the hot mushroom mixture on top.
  4. Add optional vegan cheese or extra sauce if desired.
  5. Close the burger and press lightly.

Tips for better flavor

  • Cook mushrooms until deeply browned for stronger umami flavor
  • Add a splash of soy sauce or balsamic vinegar for depth
  • Do not overcrowd the pan; cook mushrooms in batches if needed
  • Cashew-based sauce gives a richer, restaurant-style result
  • Caramelized onions can significantly improve sweetness and balance

Variations

  • Spicy version: add chili sauce or cayenne pepper to the mushrooms or sauce
  • BBQ version: replace creamy sauce with BBQ sauce
  • Protein version: add a chickpea or lentil patty
  • Gourmet version: use portobello mushrooms as a thick “steak” layer
