Ingredients

For the Rice Layer

  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups water or chicken stock
  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped mint
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Sticky Honey Soy Chicken

  • 500 g boneless skinless chicken thighs, diced
  • 1 tablespoon olive oil

Marinade & Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper

For the Avocado Layer

  • 2 ripe avocados
  • 1 tablespoon lemon juice
  • 2 tablespoons finely chopped parsley
  • Pinch of salt
  • Pinch of black pepper

Mediterranean Topping

  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 2 tablespoons finely diced red onion
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Garnish

  • Chopped parsley
  • Toasted sesame seeds
  • Lemon wedges

Step 1: Cook the Herb Rice

  1. Rinse the rice until the water runs mostly clear.
  2. In a saucepan, combine rice, water or stock, olive oil, salt, and pepper.
  3. Bring to a boil.
  4. Reduce heat to low, cover, and cook for 15–18 minutes.
  5. Remove from heat and let rest for 10 minutes.
  6. Fluff with a fork and stir in parsley and mint.

Set aside to cool slightly.


Step 2: Prepare the Sticky Honey Soy Chicken

In a bowl, combine:

  • Soy sauce
  • Honey
  • Lemon juice
  • Garlic
  • Paprika
  • Cumin
  • Black pepper

Add the diced chicken and marinate for 15–30 minutes if time allows.

Cook

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken and cook for 5–6 minutes.
  3. Pour in the remaining marinade.
  4. Continue cooking for 4–6 minutes until:
    • Chicken is fully cooked.
    • Sauce reduces and becomes glossy.
    • Chicken is coated in a sticky glaze.

Remove from heat.


Step 3: Make the Avocado Layer

Mash the avocados in a bowl.

Mix in:

  • Lemon juice
  • Parsley
  • Salt
  • Pepper

Leave slightly chunky for texture.


Step 4: Prepare the Mediterranean Salad

Combine:

  • Cucumber
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Lemon juice
  • Salt
  • Pepper

Toss gently.


Step 5: Assemble the Rice Stack

Using a food ring or measuring cup:

Bottom Layer

Press about ½ cup herb rice into the mold.

Middle Layer

Add a layer of avocado mixture.

Top Layer

Spoon sticky honey soy chicken over the avocado.

Carefully remove the mold.

Top with:

  • Mediterranean salad
  • Parsley
  • Toasted sesame seeds

Repeat for remaining servings.
