Instructions
Step 1: Prepare the Mushrooms
- Wipe mushrooms clean with a damp paper towel.
- Avoid soaking them in water, as mushrooms absorb moisture easily.
- Trim tough stem ends if necessary.
- Leave small mushrooms whole; halve or quarter larger ones.
Step 2: Heat the Pan
- Place a large skillet over medium-high heat.
- Add olive oil and 1 tablespoon of the vegan butter.
- Allow the butter to melt completely.
Step 3: Sauté the Mushrooms
- Add mushrooms in a single layer.
- Let them cook undisturbed for 3–4 minutes to develop a golden-brown color.
- Stir and continue cooking for another 4–5 minutes.
- The mushrooms will release moisture and then begin to caramelize.
Step 4: Add Garlic Butter
- Reduce heat to medium.
- Add the remaining 2 tablespoons vegan butter.
- Stir until melted.
- Add minced garlic and red pepper flakes.
- Cook for 1–2 minutes, stirring constantly to prevent the garlic from burning.
Step 5: Season
- Stir in:
- Soy sauce or tamari
- Salt
- Black pepper
- Thyme
- Cook for another 1–2 minutes.
Step 6: Finish
- Remove from heat.
- Stir in lemon juice and nutritional yeast if using.
- Sprinkle with fresh parsley.
- Taste and adjust seasoning.
