3-Ingredient Chocolate Peanut Clusters

  • Prep time: 10 minutes
  • Chill time: 30 minutes
  • Yields: About 18–24 clusters

Ingredients

  • 12 oz (340g) high-quality semi-sweet or milk chocolate chips (or a mix of both)
  • 12 oz (340g) white chocolate chips or peanut butter chips (mixing types of chocolate adds great depth of flavor!)
  • 2 cups roasted peanuts (salted peanuts give a fantastic sweet-and-salty flavor contrast)

Step-by-Step Instructions

  1. Prep your Surface: Line a large baking sheet with parchment paper or wax paper. This ensures the chocolate won’t stick once it hardens.
  2. Melt the Chocolate: * Microwave Method: Combine all the chocolate chips in a large, microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat it, or the chocolate will seize.
    • Stovetop Method (Double Boiler): Place the chips in a heatproof bowl set over a pot of gently simmering water (don’t let the bottom of the bowl touch the water). Stir constantly until melted.
  3. Add the Peanuts: Remove the melted chocolate from the heat source. Pour the roasted peanuts directly into the bowl and stir until every single peanut is completely coated in smooth chocolate.
  4. Scoop the Clusters: Using a tablespoon or a small cookie scoop, drop spoonfuls of the mixture onto your prepared baking sheet, leaving a small amount of space between each cluster.
  5. Set and Cool: Place the baking sheet in the refrigerator for about 30 minutes, or leave them at room temperature for about an hour, until the chocolate has completely hardened.

Pro-Tip: If you want to elevate these a little bit, sprinkle a tiny pinch of flaky sea salt (like Maldon) over the top of each cluster right after you scoop them onto the paper, before the chocolate sets! Store them in an airtight container in the fridge to keep them snappy and fresh.
