Step 1: Drain the Zucchini (Crucial Step!)

  1. Remove Excess Water: Zucchini holds a massive amount of water. Put your grated zucchini into a clean kitchen towel or cheesecloth over the sink.
  2. Squeeze tightly: Twist and squeeze as much liquid out as you physically can. Getting the zucchini dry ensures your tots don’t turn mushy and will crisp up beautifully.

Step 2: Mix the Ingredients

  1. Combine: In a large bowl, add your well-drained zucchini, grated carrot, diced green peppers, and the two egg yolks (and whites).

Step 3: Shape the Tots

Step 4: Cook Until Golden

  1. Heat the Pan: Heat your oil in a large non-stick skillet over medium heat.
