*Ingredients*

– 1 cup blueberries, fresh or frozen

– 1 1/2 cups rolled oats

– 2 eggs

– 1/3 cup honey

– 1/2 cup milk – dairy or non-dairy works

– 1 tsp vanilla extract

– 1/2 tsp cinnamon

– Pinch of salt – optional, but helps balance sweetness

*Instructions*

1. *Prep*: Preheat your oven to 350°F / 175°C. Line an 8×8 inch baking dish with parchment paper or grease it lightly.

2. *Mix wet ingredients*: In a bowl, whisk together the eggs, honey, milk, and vanilla extract until combined.

3. *Add dry ingredients*: Stir in the oats, cinnamon, and salt. Mix until the oats are coated.

4. *Fold in blueberries*: Gently fold in the blueberries so they don’t burst too much.

5. *Bake*: Pour the mixture into the prepared dish and spread it evenly. Bake for 25-30 minutes, or until the top is golden and the center is set.

6. *Cool & slice*: Let it cool for at least 15 minutes before slicing into bars. This helps them hold together.

*Tips*

– If using frozen blueberries, don’t thaw them first to avoid a soggy bake.

– For extra crunch, sprinkle a few extra oats on top before baking.

– Store in the fridge for up to 4 days, or freeze for up to 2 months.
