Greek Yogurt Chicken Salad

Ingredients
The Base:
2 cups shredded chicken (rotisserie chicken works perfectly and saves time)
1/2 cup cucumber, diced small
1/4 cup red onion, finely diced
2-3 green onions (scallions), sliced
The Creamy Dressing:
1/2 cup plain Greek yogurt (2% or whole milk yogurt works best for creaminess)
1 tbsp mayonnaise (optional, just for a bit of richness)
1 tbsp fresh lemon juice
1/2 tsp garlic powder
Salt and black pepper to taste
For Serving:
Tortilla chips, pita chips, or crackers
Instructions
Prep the Chicken: If you are using whole chicken breasts, cook and shred them using two forks. If using a rotisserie chicken, simply shred or chop 2 cups of meat.
Mix the Dressing: In a medium bowl, whisk together the Greek yogurt, mayo (if using), lemon juice, garlic powder, salt, and pepper until smooth.
Combine: Add the shredded chicken, diced cucumber, red onion, and most of the green onions to the bowl with the dressing. Toss everything together until well coated.
Garnish & Serve: Top with the remaining green onions. Scoop it up with your favorite tortilla chips or crackers and enjoy!
Pro-Tip: If you want an extra kick, add a pinch of dill, a splash of hot sauce, or a handful of crumbled feta cheese!
