Cheesy Chicken Fritters

These juicy chicken fritters are crispy on the outside, tender on the inside, and packed with protein. They’re perfect for lunch, dinner, meal prep, or as a protein-rich snack.

Ingredients

  • 2 lb (900 g) boneless, skinless chicken breast, finely diced
  • 1 cup (225 g) blended low-fat cottage cheese
  • 1 cup (100 g) shredded part-skim mozzarella cheese
  • ½ cup (50 g) grated Parmesan cheese
  • 2 large eggs
  • ½ cup (50 g) unflavored whey protein isolate
  • 2 tbsp almond flour
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil or avocado oil (for frying)

Optional Garlic Yogurt Sauce

  • ½ cup (120 g) plain nonfat Greek yogurt
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tbsp chopped fresh dill or parsley
  • Salt and pepper, to taste

Instructions

  1. Blend the cottage cheese until smooth.
  2. In a large bowl, combine the diced chicken, blended cottage cheese, mozzarella, Parmesan, eggs, whey protein isolate, almond flour, garlic, onion powder, paprika, Italian seasoning, salt, pepper, and parsley. Mix until evenly combined.
  3. Let the mixture rest for 5–10 minutes so the protein powder and almond flour can absorb moisture.
  4. Heat the oil in a large nonstick skillet over medium heat.
  5. Scoop about ¼ cup of the mixture for each fritter and gently flatten with a spatula.
  6. Cook for 4–5 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
  7. Transfer to a paper towel-lined plate.
  8. For the sauce, whisk together the Greek yogurt, garlic, lemon juice, herbs, salt, and pepper.
  9. Serve the fritters warm with the garlic yogurt sauce.
