Cheeseburger Quesadillas

All the flavors of a juicy cheeseburger—seasoned beef, melted cheese, pickles, and burger sauce—wrapped in a crispy low-carb tortilla. A fast, protein-packed meal perfect for lunch or dinner.

Ingredients

Cheeseburger Filling

  • 1½ lb (680 g) lean ground beef (90–93%)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce (optional, check for added sugar)
  • 4 slices sugar-free bacon, cooked and crumbled (optional)

Low-Carb Quesadilla Base

  • 4 large low-carb tortillas (or high-protein tortillas)
  • 1½ cups (150 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese

Burger Toppings

  • ¼ cup diced pickles
  • 2 tbsp finely diced onion (optional)
  • 2 tbsp chopped lettuce (add after cooking)

Protein Burger Sauce

  • ½ cup (120 g) Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp sugar-free ketchup
  • 1 tsp yellow mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Pinch of salt

Instructions

  1. Heat a skillet over medium-high heat.
  2. Cook the ground beef until browned and fully cooked.
  3. Add salt, pepper, garlic powder, onion powder, smoked paprika, and Worcestershire sauce.
  4. Drain excess grease if needed and set aside.

Make the Sauce

  1. Mix Greek yogurt, mayonnaise, sugar-free ketchup, mustard, garlic powder, onion powder, and salt until smooth.

Assemble Quesadillas

  1. Spread a thin layer of burger sauce on each tortilla.
  2. Add:
    • Cooked beef
    • Cheddar cheese
    • Mozzarella cheese
    • Pickles
    • Bacon (if using)
  3. Fold tortillas in half.

Cook

  1. Heat a nonstick skillet over medium heat.
  2. Cook each quesadilla for 2–3 minutes per side until golden and crispy and the cheese is melted.
  3. Slice and serve with extra burger sauce.
