Ingredients
- 2 cups (250 g) all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- 3 tbsp (40 g) cold unsalted butter, cubed
- 3 tbsp (40 g) sugar
- ½ cup (75 g) raisins or currants
- ½ cup (120 ml) milk
- 1 tsp vanilla extract (optional)
- 1 egg, beaten (for brushing)
Instructions
- Preheat the air fryer to 320°F (160°C) for 3 minutes.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Rub the cold butter into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
- Stir in the raisins or currants.
- Mix the milk and vanilla together, then gradually add to the dry ingredients. Stir just until a soft dough forms—avoid overmixing.
- Turn the dough onto a lightly floured surface and gently pat it into a circle about 1 inch (2.5 cm) thick.
- Cut into 8 wedges or use a round cutter.
- Brush the tops with the beaten egg.
- Place the scones in the air fryer basket with a little space between each. Cook in batches if necessary.
- Air fry for 10–14 minutes, or until the tops are golden and the scones are cooked through.
- Transfer to a wire rack and let cool for a few minutes before serving.
Optional Glaze
Mix:
- ½ cup (60 g) powdered sugar
- 1–2 tsp milk
- A few drops of vanilla or lemon juice
Drizzle over cooled scones if desired.
