Air fryer fruit scones

Makes: 8 scones

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 3 tbsp (40 g) cold unsalted butter, cubed
  • 3 tbsp (40 g) sugar
  • ½ cup (75 g) raisins or currants
  • ½ cup (120 ml) milk
  • 1 tsp vanilla extract (optional)
  • 1 egg, beaten (for brushing)

Instructions

  1. Preheat the air fryer to 320°F (160°C) for 3 minutes.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Rub the cold butter into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
  4. Stir in the raisins or currants.
  5. Mix the milk and vanilla together, then gradually add to the dry ingredients. Stir just until a soft dough forms—avoid overmixing.
  6. Turn the dough onto a lightly floured surface and gently pat it into a circle about 1 inch (2.5 cm) thick.
  7. Cut into 8 wedges or use a round cutter.
  8. Brush the tops with the beaten egg.
  9. Place the scones in the air fryer basket with a little space between each. Cook in batches if necessary.
  10. Air fry for 10–14 minutes, or until the tops are golden and the scones are cooked through.
  11. Transfer to a wire rack and let cool for a few minutes before serving.

Optional Glaze

Mix:

  • ½ cup (60 g) powdered sugar
  • 1–2 tsp milk
  • A few drops of vanilla or lemon juice

Drizzle over cooled scones if desired.

  • Keep the butter cold for a light, flaky texture.

  • Check for doneness at 10 minutes, as air fryer models vary. The scones should be lightly golden and sound hollow when tapped on the bottom.
