Air Fryer Potatoes with Caramelized Onions & Chives

Ingredients

  • 1½ lb (680 g) baby potatoes, halved (or Yukon Gold potatoes, cut into 1-inch pieces)
  • 2 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme (optional)
  • Salt and black pepper, to taste
  • 2 medium onions, thinly sliced
  • 2 tbsp butter (or additional olive oil)
  • 2 tbsp chopped fresh chives
  • Optional: grated Parmesan, sour cream, or a squeeze of lemon juice for serving

Instructions

  1. Season the potatoes
    • Toss the potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, thyme, salt, and pepper.
  2. Air fry
    • Preheat the air fryer to 400°F (200°C) if your model recommends preheating.
    • Arrange the potatoes in a single layer.
    • Cook for 18–22 minutes, shaking the basket every 5–7 minutes, until golden brown and tender.
  3. Caramelize the onions
    • While the potatoes cook, heat butter and the remaining tablespoon of olive oil in a skillet over medium-low heat.
    • Add the sliced onions with a pinch of salt.
    • Cook, stirring occasionally, for 20–25 minutes, until deep golden and sweet. If they begin to stick, add a splash of water.
  4. Combine
    • Toss the hot potatoes with the caramelized onions.
    • Sprinkle generously with fresh chives.
    • Taste and adjust seasoning.

Serving Ideas

  • Pair with grilled chicken, steak, salmon, or roasted vegetables.
  • Top with grated Parmesan for extra richness.
  • Add a dollop of sour cream or Greek yogurt for a creamy finish.
  • Sprinkle with crispy bacon bits for additional texture and flavor.
