Ingredients
- 1½ lb (680 g) baby potatoes, halved (or Yukon Gold potatoes, cut into 1-inch pieces)
- 2 tbsp olive oil, divided
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp dried thyme (optional)
- Salt and black pepper, to taste
- 2 medium onions, thinly sliced
- 2 tbsp butter (or additional olive oil)
- 2 tbsp chopped fresh chives
- Optional: grated Parmesan, sour cream, or a squeeze of lemon juice for serving
Instructions
- Season the potatoes
- Toss the potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, thyme, salt, and pepper.
- Air fry
- Preheat the air fryer to 400°F (200°C) if your model recommends preheating.
- Arrange the potatoes in a single layer.
- Cook for 18–22 minutes, shaking the basket every 5–7 minutes, until golden brown and tender.
- Caramelize the onions
- While the potatoes cook, heat butter and the remaining tablespoon of olive oil in a skillet over medium-low heat.
- Add the sliced onions with a pinch of salt.
- Cook, stirring occasionally, for 20–25 minutes, until deep golden and sweet. If they begin to stick, add a splash of water.
- Combine
- Toss the hot potatoes with the caramelized onions.
- Sprinkle generously with fresh chives.
- Taste and adjust seasoning.
