Ingredients
For the potato nests
- 4 large potatoes, peeled and cubed
- 2 tbsp butter
- ¼ cup milk (adjust as needed)
- 1 egg yolk (helps the nests hold shape)
- Salt and black pepper, to taste
- ½ tsp garlic powder (optional)
- ¼ cup grated cheese (optional)
For the filling
- 1 cup cooked shredded chicken, minced meat, mushrooms, vegetables, or your choice of filling
- ½ cup grated cheese
- 2 tbsp chopped spring onions or herbs
- 2–3 tbsp cream cheese or mayonnaise (optional, for a creamy filling)
Instructions
- Make the mashed potatoes
- Boil potatoes until soft.
- Drain and mash with butter, milk, seasoning, egg yolk, and cheese until smooth.
- Let cool slightly so they are easier to shape.
- Shape the nests
- Preheat oven to 200°C (400°F).
- Line a baking tray with parchment paper.
- Pipe or spoon mashed potatoes into nest shapes: make a round base with raised edges, leaving a hollow center.
- Add filling
- Place your prepared filling into the center of each nest.
- Sprinkle extra cheese on top.
- Bake
- Bake for 20–25 minutes until golden and slightly crisp.
- Broil for 1–2 minutes at the end for a deeper golden color, if desired.
- Serve
- Garnish with fresh herbs or chili flakes.
- Serve warm with ketchup, garlic sauce, or a yogurt dip.
