Ingredients (Makes 8 fritters)
- 2 medium potatoes (about 500 g), peeled and grated
- 1 small onion, finely grated
- 1 large egg
- 3 tbsp all-purpose flour
- 2 tbsp grated Parmesan (optional)
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 1 tbsp chopped parsley or chives (optional)
- Olive oil cooking spray
Instructions
- Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
- Grate the onion and squeeze out any excess liquid.
- In a large bowl, combine the potatoes, onion, egg, flour, Parmesan (if using), garlic powder, onion powder, paprika, salt, pepper, and herbs. Mix well.
- Preheat the air fryer to 190°C (375°F) for 3–5 minutes.
- Lightly spray the air fryer basket with oil.
- Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly into patties.
- Arrange the fritters in a single layer, leaving space between them. Spray the tops lightly with oil.
- Air fry for 10 minutes, carefully flip, spray again, and cook for another 8–10 minutes, or until golden brown and crispy.

- Greek yogurt mixed with herbs
- Sweet chili sauce
- Garlic aioli
- Applesauce (a traditional pairing)
Tips
- Removing as much moisture as possible from the potatoes is the key to crispy fritters.
- Cook in batches rather than overcrowding the basket.
- For extra crispiness, refrigerate the potato mixture for 15–20 minutes before cooking.
- Swap some of the potato for grated zucchini or carrot (be sure to squeeze them dry as well).
