Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 large eggs
  • ½ cup milk
  • 4 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 2 cups tart apples (such as Granny Smith or Honeycrisp), peeled, cored, and finely diced

Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk or apple cider
  • ½ tsp vanilla extract

Instructions

  1. Prep: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Mix Wet Ingredients: In a separate bowl, beat the eggs, then whisk in the milk, melted butter, and vanilla extract until well combined.
  4. Combine: Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the diced apples.
  5. Shape & Bake: Drop ¼-cup portions of batter onto the prepared baking sheet, leaving space between each. Bake for 12–15 minutes until golden brown and a toothpick inserted into the center comes out clean.
  6. Glaze: Whisk together the powdered sugar, milk (or cider), and vanilla in a small bowl until smooth. Drizzle or brush generously over warm fritters.
