- 2 cups romaine lettuce, chopped
- 1 medium tomato, diced
- ½ cucumber, diced
- ¼ red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled
1.Prepare the Yogurt Sauce:
In a small bowl, whisk together the Greek yogurt, 1 tablespoon lemon juice, minced garlic, herbs, and black pepper until smooth. Cover and chill in the refrigerator while preparing the beef.
2.Brown and Season the Beef:
Heat the olive oil in a skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned (about 5–7 minutes). Stir in the garlic, paprika, cumin, oregano, black pepper, and salt. Cook for an additional 2–3 minutes until fragrant.
3.Finish the Meat:
Remove the skillet from the heat, stir in the remaining 1 tablespoon of lemon juice to deglaze, and set aside.
4.Assemble the Wraps:
Warm the tortillas briefly in a dry skillet or microwave to make them pliable. Down the center of each tortilla, layer the romaine lettuce, diced cucumber, diced tomato, red onion, seasoned beef, and crumbled feta cheese.
5.Garnish and Serve:
Drizzle generously with the prepared yogurt herb sauce and top with chopped parsley. Fold the sides inward, roll tightly, and serve immediately.
