A rich, cheesy macaroni pie with a creamy center and golden, bubbly top. This version is inspired by classic baked macaroni pies, which are often served sliced like a pie.

Ingredients

  • 2 cups elbow macaroni, uncooked
  • 3 cups shredded sharp cheddar cheese
  • Β½ cup shredded mozzarella
  • 2 cups milk
  • 3 large eggs
  • 4 tbsp butter
  • 2 tbsp all-purpose flour
  • Β½ tsp salt
  • Β½ tsp black pepper
  • Β½ tsp paprika
  • Β½ tsp garlic powder
  • Β½ tsp mustard powder or 1 tsp Dijon mustard
  • ΒΌ cup grated Parmesan
  • 2 tbsp breadcrumbs, optional
  • Fresh parsley, for garnish

Method

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9-inch deep-dish pie plate or baking dish.
  2. Cook the macaroni: Boil in salted water until just al dente, according to package directions. Drain well.
  3. Make the cheese sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk, whisking constantly until slightly thickened.
  4. Reduce heat and stir in 2 cups cheddar, mozzarella, Parmesan, mustard, garlic powder, paprika, salt, and pepper until smooth.
  5. Combine: Add the cooked macaroni to the cheese sauce and mix well.
  6. Add eggs: Let the mixture cool for about 5 minutes, then whisk the eggs separately and stir them into the macaroni mixture. The eggs help the baked macaroni set firmly enough to slice like a pie.
  7. Bake: Pour into the prepared pie dish and smooth the top. Sprinkle with the remaining cheddar and breadcrumbs if using.
  8. Bake for 30–35 minutes, until golden, bubbling, and set in the center.
  9. Let rest for 10–15 minutes before slicing. Garnish with parsley and serve warm.
