Ingredients

  • 2 medium zucchini, grated
  • 1 cup rolled oats
  • 2 large eggs, beaten
  • Β½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ΒΌ cup chopped fresh parsley
  • 1 tsp dried oregano
  • Β½ tsp paprika
  • Β½ tsp salt
  • ΒΌ tsp black pepper
  • 2–3 tbsp olive oil, for cooking

Method

  1. Grate and drain: Grate the zucchini, sprinkle with salt, and let sit for 5 minutes. Squeeze out as much liquid as possible using a clean kitchen towel. This is essential for crispy patties.
  2. Mix: Combine zucchini, oats, eggs, Parmesan, garlic, parsley, oregano, paprika, salt, and pepper. Let the mixture rest for 5–10 minutes so the oats absorb moisture and help bind the patties.
  3. Shape: Form the mixture into 8–10 small patties, about Β½-inch thick. If the mixture feels too wet, add another tablespoon of oats.
  4. Cook: Heat olive oil in a non-stick skillet over medium heat. Cook patties for 4–5 minutes per side, until deeply golden and crispy.
  5. Serve: Transfer to a wire rack or paper towel-lined plate and serve warm with garlic yogurt, tzatziki, or your favorite chutney.
