Ingredients
- 2 medium zucchini, grated
- 1 cup rolled oats
- 2 large eggs, beaten
- Β½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ΒΌ cup chopped fresh parsley
- 1 tsp dried oregano
- Β½ tsp paprika
- Β½ tsp salt
- ΒΌ tsp black pepper
- 2β3 tbsp olive oil, for cooking
Method
- Grate and drain: Grate the zucchini, sprinkle with salt, and let sit for 5 minutes. Squeeze out as much liquid as possible using a clean kitchen towel. This is essential for crispy patties.
- Mix: Combine zucchini, oats, eggs, Parmesan, garlic, parsley, oregano, paprika, salt, and pepper. Let the mixture rest for 5β10 minutes so the oats absorb moisture and help bind the patties.
- Shape: Form the mixture into 8β10 small patties, about Β½-inch thick. If the mixture feels too wet, add another tablespoon of oats.
- Cook: Heat olive oil in a non-stick skillet over medium heat. Cook patties for 4β5 minutes per side, until deeply golden and crispy.
- Serve: Transfer to a wire rack or paper towel-lined plate and serve warm with garlic yogurt, tzatziki, or your favorite chutney.
